Vinification of the Valpolicella Ripasso Classico Superiore from Vigneti Villabella
This Valpolicella Ripasso made from 70% Corvina, 20% Rodninella and 10% Corvinone is produced using the traditional Ripasso method. The wine is fermented a second time on the Amarone marc.
The wine is then matured for two years in large Slavonian oak barrels and partly in barriques. The wine then undergoes a further refinement period in the bottle.
