Tasting note/tasting of the Ripasso Valpolicella from Sartori di Verona
The red color of the Ripasso Valpolicella DOC from Sartori di Verona is reminiscent of a slightly purple shimmering ruby. Its intense aroma is reminiscent of strong, spicy notes of liquorice and aromas of fruity mulberry and elderberry. The palate is characterized by an open, characterful feel, with the youthful tannins beautifully integrated into the overall structure. A long, powerful finish rounds off this red wine.
Vinification/production of the Ripasso Valpolicella from Sartori di Verona
A genuine Ripasso obtained through the special vinification process of re-extracting the Armarone mash from the already fermented Valpolicella Superiore in winter. It comes from the narrowly defined Valpolicella valley of Val di Mezzane and is cultivated on high vineyard sites for healthy grapes and clayey and calcareous soils with a high mineral content. The fully ripe and exclusively healthy grapes are harvested by hand, then dried for a month and finally crushed. Finally, slow fermentation takes place over 30 days, followed by maturation in oak barrels.
