In the glass, the Vignes de Nicole Chardonnay Viognier from Domaine Paul Mas shows a bright golden yellow color. The nose of this Domaine Paul Mas white wine presents all sorts of morello cherries, papayas, black cherries, mangoes and plums. As if that wasn't already impressive, the aging in large wooden barrels adds other aromas such as gingerbread spice, cinnamon and black tea.
This wine delights with its elegantly dry flavor. It was bottled with only 1.8 grams of residual sugar. As you would naturally expect from a wine in the upper price range, this Frenchman naturally enraptures with the finest balance for all its dryness. Aroma does not necessarily require residual sugar. Balanced and multifaceted, this silky and dense white wine presents itself on the palate. Due to its vital fruit acidity, the Vignes de Nicole Chardonnay Viognier presents itself exceptionally fresh and lively on the palate. The final of this ripening white wine from the wine-growing region of the Languedoc finally convinces with good reverberation.
Vinification of the Domaine Paul Mas Vignes de Nicole Chardonnay Viognier
This balanced white wine from France is vinified from the grape varieties Chardonnay and Viognier. After the grape harvest, the grapes arrive quickly at the winery. Here they are sorted and carefully broken up. Then, for both grape varieties, fermentation takes place at controlled temperatures in stainless steel tanks. From the second week in the fermentation process, the Chardonnay is placed in new oak barrels. Afterwards, the Chardonnay is aged 50% in French oak barrels and 50% in American oak barrels. The Viognier is aged exclusively in stainless steel tanks.

This French wine is best enjoyed well chilled at 8 - 10°C. It is perfect as a companion to pasta with sausage dumplings, chickpea curry or roasted trout with ginger pear.
