The Xavier Reverchon Vin De Paille Côtes Du Jura presents itself pleasantly dry to the wine enthusiast. This white wine never shows itself coarse or meager, but round and smooth. On the palate, the texture of this powerful white wine is wonderfully silky, fleshy and dense. In the finish, this wine from the wine-growing region of Jura finally inspires with beautiful length. There are again hints of apricot. In the reverberation, mineral notes of the clay-dominated soils are still added.
Vinification of the Vin De Paille Côtes Du Jura by Xavier Reverchon
This powerful white wine from France is vinified from the grape varieties Poulsard, Savagnin Blanc and Chardonnay. The grapes grow in optimal conditions in the Jura Mountains. The vines here dig their roots deep into soils of clay. After the grape harvest, the grapes arrive quickly at the winery. Here they are sorted and carefully crushed. Fermentation follows in stainless steel tanks at controlled temperatures. Fermentation is followed by aging for several months on the fine lees before the wine is finally drawn into bottles.
