Vinification of the Viognier Nussdorf from Emil Bauer
The basis for the balanced Viognier Nussdorf from the Palatinate is grapes from the Viognier grape variety. The grapes grow under optimal conditions in the Palatinate. The vines here dig their roots deep into soils of clay, loess and sandstone. The grapes for this white wine from Germany, after ensuring optimal ripeness, are harvested exclusively by hand. After the hand harvest, the grapes immediately reach the winery. Here they are sorted and carefully broken up. This is followed by fermentation in large wood at controlled temperatures. After the end of fermentation, the Viognier Nussdorf is aged for several months in double oak barrels.
