Vinification of the Vivia Maremma Toscana from Le Mortelle
The elegant Vivia Maremma Toscana from Italy is a cuvée made from the Inzolia, Vermentino and Viognier grape varieties. The grapes grow under optimal conditions in Tuscany. Here, the vines dig their roots deep into soils of loam, sand, clay and marl. When they are perfectly ripe, the grapes for Vivia Maremma Toscana are harvested exclusively by hand without the help of coarse and less selective harvesters. After the grape harvest, the grapes are transported to the press house as quickly as possible. Here they are selected and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. At the end of this process, the Vivia Maremma Toscana can continue to harmonize on the fine lees for 6 months.
