In Styria, the vines that produce the grapes for this wine grow on soils of sand and marl. When they are perfectly ripe, the grapes for the Weißburgunder Südsteiermark DAC are harvested exclusively by hand without the help of coarse and less selective full harvesters. After the harvest, the grapes immediately reach the winery. Here they are sorted and carefully milled. This is followed by fermentation in stainless steel tanks at controlled temperatures.
