This wine impresses with its elegantly dry taste. It was bottled with just 0.7 grams of residual sugar. As you would expect from a wine in the high quality wine range, this Italian naturally delights with the finest balance despite its dryness. Excellent taste does not necessarily require sugar. The texture of this well-balanced red wine is wonderfully velvety on the palate. The When We Dance Chianti Docg is impressively fresh and lively on the palate thanks to its present fruit acidity. On the finish, this young wine from the Tuscan wine-growing region finally delights with its beautiful length. Once again, there are hints of blackcurrant and mulberry.
Vinification of the When We Dance Chianti Docg from Il Palagio
Canaiolo, Colorino and Sangiovese grapes form the basis for the first-class and wonderfully balanced When We Dance Chianti Docg cuvée from Il Palagio. After being harvested by hand, the grapes are immediately taken to the press house. Here they are sorted and carefully crushed. This is followed by fermentation in large oak barrels at controlled temperatures. Vinification is followed by maturation for several months in oak barrels. Once the wine is finished, the When We Dance Chianti Docg is carefully harmonized.
