Vinification of the Zeró 100 Grande Cuvée Réserve by Oliver Zeter
The starting point for the first-class and wonderfully elegant Zeró 100 Grande Cuvée Réserve from Oliver Zeter are Chardonnay and Pinot Noir grapes. Zeró 100 Grande Cuvée Réserve is an Old World wine through and through, as this German wine exudes an extraordinary European charm that clearly underscores the success of Old World wines. The development of the vintage for this wine of Chardonnay and Pinot Noir is influenced to a considerable extent by the climate of the growing region. In the Palatinate, the grapes thrive in a rather cool climate, which is reflected, among other things, in particularly long and evenly ripened grapes and a rather moderate must weight. The grapes for this sparkling wine from Germany, after ensuring optimal ripeness, are harvested exclusively by hand. Following the harvest, the grapes are immediately taken to the press house. Here they are sorted and carefully ground. The fermentation of the base wines follows. After the composition of the final sparkling wine, further aging follows on the basis of classic bottle fermentation. Subsequently, the Oliver Zeter Zeró 100 Grande Cuvée Réserve matures for 100 months on the full lees.
