Vinification of the Pedregal Sauvignon Blanc from Antigua Bodega
This wine clearly focuses on one grape variety, namely Sauvignon Blanc. Only flawless grapes were brought in for this wonderfully balanced single-varietal wine from Antigua Bodega. The grapes grow close to the river in Canelones. Here, the vines dig their roots deep into granite soils. Due to the moderating influence of the nearby river, the grapes ripen more slowly and develop more aromatic depth. The grapes for this white wine from Uruguay are harvested exclusively by hand at the time of optimum ripeness. After the grape harvest, the grapes are quickly transported to the winery. Here they are selected and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Once fermentation is complete, the Pedregal Sauvignon Blanc can continue to harmonize on the fine lees for a few months.
