Vinification of the Prodigio del Sole Chardonnay from Latentia

This elegant white wine from Italy is made from the Chardonnay grape variety. After being harvested by hand, the grapes are immediately taken to the winery. Here they are selected and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. At the end of fermentation, the Prodigio del Sole Chardonnay is allowed to harmonize further on the fine lees for a few months. Once the wine is finished, the Prodigio del Sole Chardonnay is carefully harmonized.
