Vinification of the Southern Ocean by Felix Solis
This wine clearly focuses on one grape variety, Sauvignon Blanc. For this wonderfully balanced single varietal wine from Felix Solis, only top quality grapes were harvested. After the hand harvest, the grapes reach the press house by the fastest route. Here they are sorted and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. After the end of fermentation, the Southern Ocean is allowed to further harmonize on the fine lees for a few months.
