The final of this cava from the wine-growing region of Catalonia, more precisely from Penedès DO, finally convinces with good reverberation.
Vinification of Codorníu Clasico Seco
The elegant Clasico Seco from Spain is a cuvée, made from the grape varieties Parellada, Viura and Xarel-lo. Following the grape harvest, the grapes are brought to the winery in the fastest way possible. Here they are sorted and carefully ground. Then the fermentation of the base wines takes place. After the composition of the final cava follows further aging based on the Méthode Traditionelle, classic bottle fermentation. Subsequently, the Codorníu Clasico Seco matures for 9 months in the bottle.
