This balanced red wine from the USA is vinified from the grape varieties Cabernet Sauvignon and Merlot. After the grape harvest, the grapes are quickly taken to the press house. Here they are sorted and carefully broken up. Fermentation then takes place in stainless steel tanks and small wood at controlled temperatures. At the end of fermentation, the Stimson Estate Cellars Cabernet Sauvignon is allowed to further harmonize on the fine lees for a few months.
