The Palo Cortado Viejo CP of Valdespino appears in the glass in a mahogany brown and reveals the intense and elegant aromas of hazelnuts, walnuts and a delicate hint of spices.
This sherry is dry on the palate and reveals notes of nuts, hints of wood and minerality.
Vinification of the Valdespino Palo Cortado
The Palomino Fino grapes for this sherry come from the Macharnudo Alto single vineyard. Only selected barrels with appropriate characteristics from the Inocente (Fino) and Tio Diego (Amontillado) soleras are used to produce this Palo Cortado.
