Somehow, the Appassimento red wines have gradually crept into our wine connoisseur hearts. But one can also understand, with the wonderful residual sweetness, the full aroma fullness and not to forget the intense color. But what exactly does Appassimento mean?
When translated literally, it means "withering" or "withering away." The grapes are usually dried for two to four months immediately after harvest. This method evaporates the water - preserving the acidity, sugars and extractives, becoming more concentrated. At the end of this process, the grapes look almost like raisins.
This also explains the semi-dry taste, as the grapes have a high, natural residual sweetness. Many wines made using the appassimento method come from Italy. However, there is also a French wine hidden in our package. We hope you enjoy trying them out!
