Vinification of the Catarratto Sicilia from Baglio di Pianetto
This wine clearly focuses on one grape variety, namely Catarratto. Only the best grapes were harvested for this wonderfully balanced single-varietal wine from Baglio di Pianetto. The grapes grow under optimal conditions in Sicily. Here, the vines dig their roots deep into soils of sedimentary and weathered rock. The Catarratto is obviously also determined by the climate and the Sicilia DOC viticultural style. This Italian can be described as an Old World wine in the best sense of the word, which presents itself in an extraordinarily impressive way. When they are perfectly ripe, the grapes for Catarratto Sicilia are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After the harvest, the grapes are immediately taken to the winery. Here they are selected and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Vinification is followed by maturation on the fine lees for several months before the wine is finally drawn off.
