Vinification of the Edelspatz Noble Late Harvest from Delheim
This elegant white wine from South Africa is vinified from the Riesling grape variety. After the grape harvest, the grapes are taken to the press house as quickly as possible. Here they are sorted and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. The fermentation is followed by a few months of aging on the fine lees before the wine is finally bottled.
