Vinification of the Baccanera Langhe Rosso by Lo Zoccolaio
Welcome to the premier league of top Italian cuvées! The Baccanera Langhe Rosso from Lo Zoccolaio is a cuvée made from the two original Piedmontese grape varieties Barbera and Nebbiolo, which are complemented by the international "king of red wines" Cabernet Sauvignon and Merlot. The vines are grown in the municipalities of Barolo and Monforte - both of which guarantee the best terroir. Vinification takes place in Barolo. After the grapes are harvested by hand, they are vinified separately by grape variety. The grapes are pressed and undergo temperature-controlled whole-cluster fermentation. The mash cake remains in the fermentation tank with the must until fermentation is complete in order to extract a maximum of phenols and aromatic substances from the grape skins. The cuvée is then transferred to small French oak barriques, where it is left to mature for a further 18 months.
