Vinification of the Château La Soujeole Malepère by Gérard Bertrand
This balanced red wine from France is vinified from Cabernet Franc, Malbec and Merlot grapes. The grapes grow under optimal conditions in the Languedoc. The vines here dig their roots deep into soils of limestone, granite, sandstone, clay and marl. The grapes for this red wine from France, after ensuring optimal ripeness, are harvested exclusively by hand. After the harvest, the grapes are quickly transferred to the press house. Here they are selected and carefully crushed. This is followed by fermentation in small wood at controlled temperatures. Fermentation is followed by aging on fine lees for several months before the wine is finally bottled.
