Vinification of the Baglio di Pianetto Fermata 125 Etna Rosso
This balanced red wine from Italy is made from the Nerello Mascalese grape variety. Once perfect physiological ripeness has been ensured, the grapes for the Fermata 125 Etna Rosso are harvested exclusively by hand without the use of stressful and barely selective harvesters. After manual harvesting, the grapes are immediately taken to the winery. Here they are selected and carefully broken up. Fermentation then takes place in stainless steel tanks and large wooden barrels at controlled temperatures. Once fermentation is complete, the Fermata 125 Etna Rosso can continue to harmonize on the fine lees for several months.
