Vinification of the Carpineto Vinsanto del Chianti
This powerful Vin Santo from Italy is made from the Malvasia Bianca and Trebbiano grape varieties. The Vinsanto del Chianti is obviously also determined by the climatic and stylistic factors of Chianti. This Italian can literally be described as an Old World wine, which presents itself in an extraordinarily impressive way. Once perfect physiological ripeness has been ensured, the grapes for the Vinsanto del Chianti are harvested exclusively by hand without the help of coarse and less selective machines. After the harvest, the grapes are transported to the winery as quickly as possible. Here they are selected and carefully broken up. This is followed by fermentation in small oak barrels at controlled temperatures. At the end of this process, the Vinsanto del Chianti is aged for 30 months in French oak barrels. The ageing in barrels is followed by extensive bottle ageing, which makes this Vin Santo even more complex.
