Vinification of the I Salci Gran Selezione Chianti Classico from Borgo Salcetino
This balanced red wine from Italy is made from the Canaiolo and Sangiovese grape varieties. The vines that produce the grapes for this wine grow on clay and sandy soils in Tuscany. Once perfect physiological ripeness is ensured, the grapes for the I Salci Gran Selezione Chianti Classico are harvested exclusively by hand without the help of coarse and less selective harvesters. After the harvest, the grapes are immediately taken to the winery. Here they are selected and carefully broken up. This is followed by fermentation in large oak barrels at controlled temperatures. Once fermentation is complete, the elegant I Salci Gran Selezione Chianti Classico is aged for a further 24 months in oak barrels. The ageing in wooden barrels is followed by a long period of bottle ageing, which makes this red wine even more complex.
