Vinification of the 12 e Mezzo Negroamaro del Salento from Varvaglione
This wine clearly focuses on one grape variety, namely Negroamaro. Only the best grapes were used for this exceptionally elegant single-varietal wine from Varvaglione. After harvesting, the grapes are quickly transported to the winery. Here they are sorted and carefully crushed. This is followed by fermentation in small wooden vats at controlled temperatures. At the end of fermentation, the 12 e Mezzo Negroamaro del Salento is matured in American oak barriques for a further 6 months.
